Quinoa Bowl

Do you like quinoa? If you don't yet? You are going to love it!


A few years ago I started reading about the Mediterranean Diet. When I started down that nutrition path, It didn't take much for me to start loving it. Whole grains like quinoa and couscous, produce, a lot more seafood like salmon, and olive oil are among the main things—there’s a lot to love!


On my nutrition plan journey, I started reading magazines, articles, and books on the Mediterranean Diet which led to me trying different recipes that are now part of my everyday life. I especially love this recipe, one which I've made my own additions to to make it even better. How good is it? Well, my skeptical husband just loves it!


Quinoa Bowl


Ingredients


1/2 cup cooked quinoa

1 tsp olive oil

1/2 grape tomatoes

1 dash sea salt

1 dash black pepper

1/2 cup chopped kale

3 clove garlic, finely chopped

Olive oil nonstick spray

Healthy protein of your choice!


Directions

  1. Place 1/2 cup of quinoa in a serving bowl and cover it to keep it warm.

  2. Heat olive oil in saucer pan and add tomatoes with a pinch of salt and a pinch of pepper: cook, shaking saucer pan occasionally until the tomatoes are tender or blistered. Add the tomatoes to the quinoa bowl.

  3. Lightly coat pan with spray. Add kale, garlic, remaining salt and pepper. Cook, stirring frequently for about 2 minutes or until kale is lightly charred. Remove from heat and add it to the quinoa bowl.

  4. Top the quinoa with the protein of your choice .

  5. Mix well and enjoy!
